Ingredients
3 cups pumpkin puree homemade
1/2 cup Pure maple syrup
2 teaspoons Cinnamon
2 tablespoons lemon zest finely grated
1/2 teaspoon nutmeg
pinch Sea salt
2 teaspoons Fresh lemon juice
1/2 teaspoon Ginger freshly grated
1 teaspoon Vanilla extract
Instructions
Put all ingredients, except for vanilla in a medium pot. Simmer, covered for 25-30 minutes. Every 5 minutes, open the lid and gently mix. Be careful, as the mixture is likely to be bubbling. The butter is cooked when it reduces in size and the mixture becomes homogenous. Add apple juice, if the mixture gets too thick and starts to burn. Allow it to cool. Mix in vanilla, then transfer to a clean jar. Store in the fridge.

Stuffed Pizza Rolls Recipe
Ingredients:

Pizza Dough (store bought or homemade)
Pepperoni

Caramel pretzel popcorn you can make at home
- Place butter, brown sugar and corn syrup in a large microwave-safe bowl. Microwave on high for 2 minutes.
- Remove from microwave, stir and add marshmallows, stirring to coat. Microwave for 1 minute.
- Stir and microwave an additional 1-2 minutes until marshmallows are completely melted and mixture is bubbly.
- Pour marshmallow caramel over popcorn in a large bowl. Stir to coat. Spread coated popcorn on a cookie sheet sprayed with nonstick cooking spray.
- Sprinkle 1 cup chopped pretzels on top of coated popcorn.
- In a microwave-safe bowl, melt chocolate for 30 second intervals, stirring after each, until melted. Drizzle over popcorn then sprinkle with remaining 1/2 c. chopped pretzels and sea salt.
- Place pan in refrigerator for 5-10 minutes to help set chocolate (or leave it on the counter for 20-30 minutes).
Cinnamon Brioche Chocolate Chip French Toast Muffins with Coconut Streusel
Ingredients
8-10 cups of this cinnamon crunch brioche or your favorite cinnamon bread, cut into 1/2 inch cubes
1 (14 ounce) can coconut milk (regular or lite) or you may sub your favorite milk
6 large eggs
2 tablespoons brown sugar
2 tablespoons bourbon (optional)
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/4-1/2 cup semi-sweet chocolate chips (I used closer to 1/2 cup)
Coconut Streusel
1/4 cup flour
1/4 cup brown sugar, packed
1/4 cup cold butter
1/4 cup unsweetened flaked coconut
1 teaspoon cinnamon
maple syrup, for serving (optional)
Instructions
Grease a 12 cup muffin tin with cooking spray, butter or canola oil
In a medium bowl, whisk together the coconut milk, eggs, brown sugar, bourbon, vanilla, and cinnamon.
Toss the bread cubes with the chocolate and then divide between each muffin cup. Carefully pour egg mixture evenly over each muffin tin. You may need to press down on the bread cubes after you pour a little mixture and then pour more. Try to pour slowly and carefully, but be prepared to have a little mess when you are done. It;s going to spatter no matter what. Cover the muffins with plastic wrap and refrigerate for 2 hours or up to overnight.
Another option is to add the bread cubes and chocolate chips to a 9x3 inch pyrex pan and pour the egg mixture over the bread. Use you hands to toss the bread with the egg, Cover the dish with plastic wrap and refrigerate for 2 hours or up to overnight. Then just divide the mixture between the greased muffin cups and pour any remaining egg mixture over the muffins.
For a no fuss version, leave the bread mixture in the 9x13 inch pan and continue on with directions below.
When ready to bake, preheat the oven to 350 degrees F.
While the oven preheats make the streusel, in a small bowl, combine butter, brown sugar, flour, cinnamon, and coconut. Mix together with your hands, until you have a crumbly mixture. Remove the muffins from the refrigerator and sprinkle the muffins evenly with the streusel topping.
Bake for 25-35 minutes or until tops are golden brown. Let muffins cool for 5 minutes. Use a butter knife to loosen the edges of the muffins and then pop them out. Serve with maple syrup if desired.
Sparkly White Chocolate Lemon Truffles
Ingredients
- 10 ounces high-quality white chocolate, chopped
- 2 tablespoons unsalted butter
- 6 tablespoons heavy cream
- 1 teaspoon corn syrup
- 1 drop lemon extract or pure lemon oil
- the zest of half a lemon
- white sanding sugar for coating
Instructions
Add white chocolate and butter to a bowl, then microwave on medium power for 30 seconds. Stir a few times, then microwave for 20 more seconds.
Add heavy cream and corn syrup to a small saucepan and heat over medium heat just until bubbles appear on the edges. This will happen quickly! Immediately pour the cream over the melted chocolate and butter, stirring well for a few minutes until combined. Stir in the drop of lemon oil and lemon zest, mixing to combine. Place in the fridge (or even the freezer) for 1-2 hours.
Remove from fridge and scoop out teaspoon-size balls of chocolate with a melon scooper or small spoon. Roll them into balls and dip in the sanding sugar, coating completely. These hold up great at room temperature but I tend to store them in the fridge.
5 minute mug chocalate cake
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 medium egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips
½ teaspoon vanilla extract
250 ml instant coffee
Method
Add dry ingredients to mug, and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts (high).
The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.

No Bake Chocolate Cake...just mix, pour into prepared pans & refrigerate til ready to serve!
